Here’s how I like to do them below: - Trim fat and silver skin off - Season with your favourite BBQ rub - Smoke at 120-135c for 2-3 hours until the rub has set - Wrap in a tray with some onion, butter and beef stock - Continue cooking for another 2-4 hours or until probing tender around 99c internal - Pull and serve!
